Vegan Strawberry Muffins

Before I came vegan, I used to make these mini strawberry muffins with my family. These muffins were always fluffy, moist, and tasty. Sadly, since I went vegan, I could not enjoy these mini muffins. But now, I have veganised the recipe, and ready to share it with the world! Also, I think I am going to start a series of blog posts about the best recipes to veganaise. Happy Baking!!

Recipe:

1 cup diced strawberries

1 squeeze of lemon

1 cup flour

½ cup organic sugar

1 tsp baking powder

¼ cup vegetable oil

⅓ cup vanilla vegan yogurt

1 tsp vanilla extract

¼ cup of applesauce

1 tsp organic powdered sugar

Directions:

  1. Preheat oven to 400 degrees. Line 24 mini muffin tins with baking cups
  2. Put diced strawberries in a bowl, spritz with lemon juice and gently combine
  3. In a separate bowl, combine flour, organic sugar, and baking powder
  4. In another bowl, beat together oil, plain vegan yogurt, vanilla, and applesauce. Pour mixture over dry ingredients, stir to combine. Add strawberry mixture to the batter
  5. Divide batter evenly among muffin tins. Bake for 12 to 14 minutes.
  6. When done, place on wire rack and leave for about 5 minutes till cool
  7. When cool, dust with powdered sugar
  8. Enjoy!!

Notes:

  • Remember to use organic sugar or sugar in the raw! Regular sugar is processed with bone char.
  • I recommend using the brand Kite Hill for the yogurt
  • You can substitute the applesauce with a flax egg, but the flavor of the muffin will be slightly changed
  • Try not to overmix the batter. Overmixing batter can result in a dense, chewy muffin
  • Test your muffins at 12 minutes with a toothpick, do not judge the readiness of the muffin based on the color
  • Make sure your muffins are completely cool before dusting with powdered sugar

  1. Last time I made muffins, I wasn’t 100% satisfied with the results, so this is something I want to try out, especially since there are no bananas in there. Which was my problem last time, because it was way too banana-y for a chocolate chip flavor.
